as a self-proclaimed banana bread expert, enthusiast, and addict. in no particular order 😗

cinnamon crunch banana bread
wet ingredients:
- 3 large ripe bananas, mashed
- 1/3 cup olive oil
- 2 eggs
- 2/3 cup maple syrup
- 1 tbsp of vanilla
dry ingredients:
- 1 cup gluten-free flour
- 1/2 cup almond flour
- 1 tsp each of sea salt, baking powder, and cinnamon
cinnamon crunch topping:
- 1/2 cup granulated sugar
- 4 tbsp ground cinnamon
directions:
mix the wet ingredients together until well-combined. in a separate bowl, do the same for the dry ingredients. add the dry mixture to the wet and fold until uniform. transfer batter to the prepared loaf pan and top with the cinnamon sugar mixture. bake for 40-45 minutes or until a toothpick comes out clean. let cool completely before slicing!
strawberries & cream banana bread bars
ingredients:
• 3 large ripe bananas, mashed
• 1/2 cup butter
• 1/3 cup maple syrup
• 1/3 cup yogurt of choice (i used a strawberry flavor)
• 2 tsp vanilla extract
• 1 cup gluten-free flour blend
• 1/2 cup almond flour
• 1 tsp baking powder
• 1 tsp sea salt
• 1 tsp cinnamon
• 1/3 cup frozen strawberries, chopped, for mixing in
directions:
set the oven to 350F and grease a brownie tin. in a large bowl, add the wet ingredients and mix until smooth, then stir through the dry ingredients. fold everything together until uniform. fold through your chopped strawberries and transfer the batter to the prepared pan. bake for 35-40 min or until golden brown. let cool completely before frosting.
strawberry buttercream:
ingredients:
• 1/2 stick butter
• 3 tbsp cream cheese
• 1 1/2 cups powdered sugar
• 1 tbsp milk
• 1/3 cup freeze dried strawberries, crushed
directions:
start by adding the butter to a bowl and use a hand mixer to beat softly. then add in the cream cheese and beat again until combined. in 1/2 cup increments, add the powdered sugar and milk and beat until a smooth, thick frosting forms. fold through the strawberries if using. spread the frosting on the cooled cake, cut, and enjoy!
3-ingredient vegan high protein banana bread bars
ingredients:
- 2 large ripe bananas, mashed
- 1/2 cup thick vanilla yogurt of choice
- 2/3 cup vanilla protein powder of choice
directions:
set the oven to 325F and grease a small loaf tin. in a large bowl, add all of the ingredients and mix until smooth and a batter forms. fold through chocolate chips if using, then transfer to the prepared pan. bake for 15-20 min or until golden brown. let cool completely before topping with melted chocolate. let the batter set in the fridge before slicing into bars!
blueberry banana bread
wet ingredients:
— 2 ripe bananas, mashed
— 2 eggs
— 1/3 cup maple syrup
— 1/3 cup melted coconut oil
— 1 tsp vanilla
dry ingredients:
— 1 cup almond flour
— 1 cup oat flour
— 1/2 tsp baking powder
— 1/4 cup brown sugar
mix ins:
- 1 cup blueberries tossed in 2 tbsp sugar
vanilla glaze:
- 2 cups powdered sugar
- 1 tbsp vanilla coffee creamer (can use milk here + 1 tsp vanilla extract)
directions:
preheat oven to 350F and grease a loaf tin. in a mixing bowl, combine the wet ingredients until uniform and well combined. add the dry ingredients and fold everything together until a thick batter forms. stir through the blueberries, then transfer batter to the loaf tin and bake for 55-60 minutes or until golden brown. let cool completely before icing!
cinnamon sugar apple pie banana bread
ingredients:
- 1/2 cup butter, melted & cooled
- 3/4 cup coconut sugar
- 2 large eggs
- splash of vanilla extract
- 3 large ripe bananas, mashed
- 1 and 1/2 cups oat flour
- pinch of baking soda
- pinch each of sea salt, cinnamon, and apple pie spice
apples:
- 1 large apple, peeled and diced
- 2 tbsp sugar
- 1 tbsp cinnamon
directions:
heat oven to 350F and grease a loaf pan. start by preparing the apples- toss the diced apple with the cinnamon sugar and place to the side. in a separate bowl using a hand mixer, beat together the butter, sugar, eggs and vanilla until smooth. add the banana mash and mix until uniform. then fold in the dry ingredients and stir until smooth. fold apples into the mix and transfer batter to the loaf pan. sprinkle with a mix of cinnamon sugar (i did 2 tbsp granulated sugar + 2 tsp cinnamon). bake for 45-50 min. or until golden brown. let cool completely before slicing!
