BANANA BREAD PEANUT BUTTER BROWNIES
ingredients:
3 large, ripe bananas
1 egg
1/2 cup cacao powder
1/4 cup creamy salted peanut butter
1 tsp vanilla extract
1/2 cup chocolate chips + 1 tbsp coconut oil (melted together)
1 cup oat flour
1 cup almond flour
1 tsp sea salt
1 tsp baking powder
directions:
set oven to 350F. prepare a brownie tin. to a large mixing bowl, add bananas and mash until mostly broken up (i like leaving some chunks for texture). add egg, cacao powder, peanut butter, and vanilla. set aside. add the chocolate chips and coconut oil to a small microwave safe bowl, then melt for two 30-second increments (stirring in between). once the chocolate is melted, pour that into the batter and whisk until combined. now add the dry ingredients and fold those through until a thick batter forms. transfer this to the brownie tin, top with more chocolate chips, and bake for 25-30 min. store in an airtight container for up to a week!
