a slice of chocolate peanut butter heaven with 10g of protein per serving? a dream come true.
high protein chocolate peanut butter banana bread
ingredients:
1 cup cottage cheese (i use lactose free)
2 large ripe bananas, mashed
4 eggs
2 heaping tbsp creamy salted peanut butter
2 tbsp maple syrup
2 tsp vanilla extract
1 cup oat flour
1/2 cup almond flour
1/4 cup cacao powder
1 tsp baking powder
sea salt
cinnamon
chocolate chips for mixing in/topping
directions:
set the oven to 350F and prepare a loaf tin. add the cottage cheese, bananas, eggs, maple syrup, peanut butter, and vanilla to a blender and blend until rich and smooth. set aside.
in a large bowl, add the dry ingredients and mix to combine. then pour over the blended wet ingredient mixture. once the batter is *mostly* combined, fold the chocolate chips through and mix together until well distributed (careful not to over mix). transfer to the prepared pan, top with more chocolate, and bake for 50-55 min. let cool completely before slicing.
tips:
for extra protein, you could add the following:
a scoop (1 serving) of chocolate protein powder. just make sure to reduce the oat flour slightly to balance! i’d say by about 1/4 cup, but some powders absorb more liquid than others, so you’ll have some trial and error to do. i find that plant based protein powders absorb more! (protein amount will vary on which brand you use)
¼ cup hemp hearts (10g protein)
2 tbsp chia seeds (4g protein)
¼ cup crushed roasted peanuts or almonds (7–8g protein)
store in the fridge for up to 5 days or freeze individual slices for a quick snack or breakfast. i wouldn’t leave this one on the counter at room temp because of the cottage cheese!
great with a smear of peanut butter or greek yogurt on top!
