high protein chocolate chip banana bread
10g of protein PER SLICE 🤯 and no, i didn't use protein powder...
look, i love protein powder as much as the next wellness girl, but we’re giving her a day off today. this banana bread is perfectly soft, just the right amount of sweet, and packs 10g of protein per slice, all from real food ingredients. in other words, it’s pretty much perfect.
high protein chocolate chip banana bread
for reference, i cut my loaf into 8 slices!
ingredients:
1 cup cottage cheese (i use lactose free)
2 large ripe bananas, mashed
4 eggs
2 tbsp maple syrup
2 tsp vanilla extract
1 cup oat flour
1/2 cup almond flour
1/2 cup light brown sugar (can sub regular granulated sugar or coconut sugar)
1 tsp baking powder
sea salt
cinnamon
chocolate chips for mixing in
directions:
set the oven to 350F and prepare a loaf tin. add the cottage cheese to a blender and blend until rich and smooth. optional, but if you need to get the blender moving, add a 1 tbsp or 2 of milk!
in a large bowl, add the wet ingredients (blended cottage cheese, bananas, eggs, maple syrup, and vanilla) and mix until smooth, then stir through the dry ingredients (minus the chocolate). once the batter is *mostly* combined, fold the mix ins through and mix together until well distributed (careful not to over mix). transfer to the prepared pan, top with more chocolate, and bake for 50-55 min or until golden brown. let cool completely before slicing.
just made this and wow! it turned out sooo good!! i baked it in a 9x13 cake pan instead for 25 mins and it still came out so fluffy and moist and delicious✨truly one of the best banana bread recipes ive tried
