the mediterranean-inspired pasta salad that will blow your mind (respectfully)
it's always the recipes that don't look like much that truly rock your world. this is one of them.
mediterranean-inspired pasta salad
ingredients:
3 small cucumbers, diced
2 handfuls of cherry tomatoes, halved
1 large handful of fresh dill, finely chopped (reserve half for the salad and half for the dressing)
1/2 red onion, diced
1 spoonful of pickled red onions
3-4 grilled artichokes, sliced
pasta of choice, cooked and then rinsed with cold water to cool
1/3 cup olive oil
1/2 crumbled feta (from a block packed in brine)
1/2 of the dill from above
sea salt to taste
cracked black pepper to taste
directions:
bring a stovetop pot of water to a boil and cook your pasta according package instructions. drain, rinse with cold water, and set aside.
chop up the cucumbers, tomatoes, dill, red onion, pickled red onions, and artichokes. set aside.
make the feta dill dressing by combining the olive oil, feta, sea salt, and black pepper in a small bowl. i like using a fork to mash the feta up and emulsify it into the olive oil.
in a large mixing bowl, combine everything and toss in the feta dill dressing to coat. store in the fridge for up to a week— tastes better the next day!
what’s the amount of crumbled feta? 1/2 cup or 1/2 the block?
