this week's healthy food prep: 12/21

most weeks, my healthy food preps don’t even make it into my own fridge… they go home with my sister.

i know. the willpower i must have to part with these meals!!!!

my sister is a full-time medical student. between lectures, studying, and extracurriculars, she barely has time to cook. i love getting to make her these meals each week because cooking for others is a way i personally express love for people i care about.

i curate each week’s menu with her busy, on-the- go schedule in mind. what breakfasts will keep her full and focused for a long morning of lectures? what lunches can she quickly unwrap and enjoy between patients? what dinners will feel like a hug after an extremely long day with an even longer night of flashcards ahead?

here’s what i landed on this week…

the menu:

  • cinnamon roll overnight oats

  • maple dijon crispy veggie grain bowl

  • greek orzo salad

  • lemon ricotta meatballs

the grocery list:

note that a handful of these items are pantry staples, so you may already have them on hand and won’t need to purchase :) or if you do need to buy them, i have plenty of other recipes that call for these ingredients, so you’ll have plenty of use for your purchase!

produce:

  • 2-3 large sweet potatoes

  • 1 large red onion

  • 1 head of cauliflower

  • 5-6 cups kale

  • 1/2 cup cooked beets

  • 3 small cucumbers

  • cherry tomatoes

  • 1 large handful of fresh dill

  • 1 handful of fresh parsley, finely chopped

meat:

  • 1 pound ground turkey

eggs/dairy:

  • almond milk

  • non-dairy yogurt of choice (i love Cocojune’s protein coconut yogurt)

  • thickly shaved parm (can also use grated or shredded)

  • crumbled feta (from a block packed in brine)

  • 1 half dozen eggs

  • ricotta (i used Kite Hill’s vegan ricotta)

misc:

  • gluten free oats

  • ground cinnamon

  • vanilla protein powder of choice

  • ground flaxseed

  • chia seeds

  • maple syrup

  • creamy salted almond butter

  • olive oil

  • sea salt

  • 1 microwavable quinoa pack

  • pumpkin seeds

  • dijon mustard

  • lemon juice

  • garlic powder

  • 1 box of orzo (i used gluten-free)

  • 1 can (15oz) cooked chickpeas

  • 1 jar of pickled red onions

  • 1 jar of grilled artichokes

  • cracked black pepper to taste

  • gluten free breadcrumb
