i thought i would never be able to choose a favorite recipe from each week from my preps. and then, these brookie vegan protein bars entered the chat.

the rest was history.

these taste just as insane as they look!! how could i ever go back to buying a protein bar at the grocery store, when mine look like this?

all of that fan-girling aside, i don’t mean to take attention away from the other amazing recipes this week. the herby green goddess dressing i use in the broccoli crunch salad AND the turkey meatballs is good enough to literally drink. the vanilla cream mango chia seed pudding is summer in a jar, and nothing beats a double bean salad, especially one with a mediterranean flavor profile.

a really, really good set of recipes perfect for the height of summer. menu and grocery list below for your ease!

on the menu for this week:

  • brookie vegan protein bars

  • herby green goddess broccoli crunch salad

  • herby green goddess turkey meatballs

  • mediterranean inspired double bean salad

  • vanilla cream mango chia seed pudding jars

the grocery list:

produce:

  • 1 bulb of garlic

  • fresh dill

  • 3 small cucumbers

  • 1 small container cherry tomatoes

  • 1 jar kalamata olives

  • 1 jar of pickled onions

  • 1 head of broccoli

  • 1 bag of sugar snap peas

  • 2 bunches of kale

  • 1 mango

meat:

  • 1 pound ground turkey

  • 1 package of turkey bacon

eggs/dairy:

  • 1 half dozen eggs

  • 1 container crumbled feta

  • vanilla yogurt of choice

  • milk of choice

misc:

  • almond flour

  • chocolate protein powder of choice

  • cacao powder

  • maple syrup

  • coconut oil

  • vanilla protein powder of choice

  • peanut butter

  • chocolate chips

  • raw cashews

  • shelled hemp seeds

  • lemon juice

  • olive oil

  • gluten-free breadcrumbs

  • 1 can (15oz) cannellini beans

  • 1 can (15oz) chickpeas

  • 1 microwavable quinoa pack

  • 1 bag of chia seeds
