🍳 99% of the time, i’m team sweet breakfast. this is evidenced by the many, many menus in this series that kick off with overnight oats or chia seed pudding (which all taste like dessert by the way).

every once in awhile, i really do make an effort to switch it up. in my 6/7/26 meal prep, i made the most insane white cheddar and sausage breakfast biscuits. they proved to be the meal prep breakfast that could sway me from team sweet. trust me when i say that is no easy feat.

this week, i decided to focus on feta and fresh herbs for a new breakfast biscuit flavor. these feta & herb jumbo breakfast biscuits are absolutely packed with protein, fiber, and flavor. they’re perfect for grabbing and running out the door on busy mornings. enjoy them on their own or pair them with a loaded, crisp slice of sourdough toast topped with fresh avocado. whoops! just drooled on my keyboard 😭

🍌 i’ve made what feels like endless varieties of banana bread (it’s truly my specialty), but one i haven’t shared in a long time is my chocolate chunk sticky date banana bread. the title alone moves me to tears. the first bite of a fresh, warm slice from the oven? i’m fully sobbing. so good.

i love including banana breads in my weekly preps because they can play both breakfast and dessert. when i want to start my day with a slice, i crumble it up into a yogurt bowl. when i want to end my day with a slice, i toast it and smear it with a layer of peanut butter (and usually more chocolate chips, because i’m insane… or am i?). however and whenever you choose to enjoy this, just be prepared for your soul to leave your body.

🍋 i know i know, i’m also tired of protein being shoved into EVERYTHING. so bear with me when i tell you about this lemon garlic & herb loaded rice salad.

technically this is more of a pasta salad. i used a protein rice here, a product that’s made from lupini beans but made into the shape of rice grains. the result is a base that looks and feels like rice, but packs a stronger protein and fiber punch. using it here in a loaded salad helps make this a complete meal on its own. i include a meatball recipe later in the prep that can pair with this salad, but serving together is totally optional.

🍫 every prep includes a dedicated sweet treat. this week i took inspiration from my viral vegan twix bars. here they get turned into loaded cups, with every layer more perfect than the last. these are decadent and rich while somehow not feeling heavy. i love love love ending the night with one of these and a mug of tea.

🥩 and finally, what’s a prep without the meatballs!? why is bison so underrated? does anyone else munch on meatballs for a high protein snack in the afternoon? i promise that’s my last question. all i’ll say is this: once you make these, you’re going to be obsessed with them for a long time.

note that a handful of these items are pantry staples, so you may already have them on hand and won’t need to purchase :) or if you do need to buy them, i have plenty of other recipes that call for these ingredients, so you’ll have plenty of use for your purchase!

  • 3 ripe bananas

  • 4 scallions

  • 2 red bell peppers

  • 1 pint cherry tomatoes

  • 1 large cucumber

  • 2 small red onions

  • 1 lemon

  • 1 small handful fresh dill

  • 1 medium handful fresh parsley

  • 1/4 cup fresh parsley

  • 1 medium handful fresh cilantro

  • 1 tbsp fresh mint

  • 4 garlic cloves

  • 1 large container pitted dates (i like mejdool)

eggs/meat

  • 1 dozen eggs

  • 1 package cooked chicken sausages

  • 1 lb ground bison

dairy

  • 1 large block feta cheese packed in brine

pantry staples

  • almond flour

  • oat flour

  • gluten-free breadcrumbs

  • vanilla protein powder (this one is my favorite)

  • baking powder

  • cinnamon

  • dried oregano

  • ground cumin

  • sea salt

  • cracked black pepper

  • olive oil

  • maple syrup

  • brown sugar

  • vanilla extract

  • creamy salted peanut butter

  • kalamata olives

  • chickpeas

  • tomato paste

  • protein rice (or basmati rice) (i use this one from the brand Kaizen— it’s gluten-free and has 20g protein per serving)

  • 1 bag chocolate chips/chocolate chunks
