this week's high protein healthy food prep
warning: this snap pea avocado salad is absolutely addictive
give me allllll the spring veggies! i’m super into no-lettuce salads (not just right now, but always), so i developed two for this week’s food prep. one is a light, crisp, crunchy snap pea salad that is quite literally addictive. it’s nourishing and veggie packed without leaving you feeling heavy. the second is a bit denser, perfect for dinner after a long day. packed with seasonal veggies and lots of herbs! both can be paired my herby bison meatballs for protein and flavor.
can’t forget my sweet tooth! this week i went with blueberry cheesecake overnight oats for an easy breakfast option. these turned out SO lush and satiating. love the little dollop of cream cheese on top to make these feel like dessert!
and to stay on brand, i had to include at least one banana bread-adjacent recipe. this week we have almond butter cookies— minimal ingredients but guaranteed to hit the spot. i’ve been noshing on mine after dinner but you could honestly eat them for breakfast (i’m a fan of this option).
as usual, all recipes are gluten-free! nearly all can easily be modified for vegan/vegetarian diets as well (just skip the meatballs, lol).
